  • 1 1/2 cups powdered sugar
  • 34 tablespoons eggnog
  • 1/4 teaspoon ground nutmeg (for sprinkling, freshly grated is best)
  • 1/4 teaspoon vanilla extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together flour, cornstarch, baking powder, baking soda, nutmeg, cinnamon, and salt.
  3. In a large bowl, beat unsalted butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
  4. Beat in egg, vanilla extract, and rum extract (if using) until fully combined.
  5. Slowly mix in eggnog. The mixture may look curdled; this is normal.
  6. Add the flour mixture to the butter mixture in two additions, mixing on low speed until just combined. Do not overmix.
  7. Using a medium cookie scoop (about 1.5 tablespoons), drop dough onto the prepared baking sheet, spacing about 2 inches apart.
  8. Bake for 10-12 minutes, until cookies are just set and edges are barely golden. Rotate pan halfway through baking.
  9. Let cookies cool on the pan for 3-5 minutes, then transfer to a wire rack.
  10. In a small bowl, whisk together powdered sugar, eggnog, and vanilla extract (if using) until smooth and drizzly.
  11. Once cookies are cool, spoon or spread glaze over each cookie. Sprinkle with a pinch of nutmeg.
  12. Let glaze set for 30 minutes before stacking or packaging. Serve fresh or store in an airtight container.
