Instructions

  1. In a large mixing bowl, combine the rolled oats, ground flaxseed, salt, and mini chocolate chips. Stir to distribute evenly.
  2. Add the creamy peanut butter, honey, and vanilla extract to the bowl.
  3. Mix everything together with a rubber spatula or wooden spoon until a uniform, slightly sticky mixture forms. If too dry, add a teaspoon more honey or peanut butter; if too sticky, add a tablespoon more oats.
  4. For easier rolling, chill the mixture in the refrigerator for 10-15 minutes (optional).
  5. Using your hands, scoop about 1 tablespoon of the mixture and roll into a 1-inch ball. Place on a parchment-lined baking sheet or plate. Repeat with remaining mixture (makes about 18-20 bites).
  6. Refrigerate the bites for at least 30 minutes to firm up (or freeze for 15 minutes if in a rush).
