Instructions

  1. Preheat oven to 425°F (220°C). Place a wire cooling rack inside a large baking sheet and spray lightly with cooking spray.
  2. Cut cauliflower into evenly sized florets (about 1 to 1½ inches). Rinse and pat very dry with a clean kitchen towel.
  3. In a medium bowl, whisk together flour, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne (if using). Slowly pour in milk while whisking until smooth batter forms (pancake batter consistency).
