  • 1/3 cup breadcrumbs (plain or Italian)
  • 2 tablespoons milk
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon zest, finely grated
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 cup chicken broth (low-sodium)
  • 1/4 cup lemon juice, freshly squeezed
  • 2 tablespoons capers, drained
  • 1 tablespoon all-purpose flour
  • Fresh parsley for garnish

Instructions

  1. In a large mixing bowl, combine ground chicken, breadcrumbs, milk, egg, garlic, parsley, lemon zest, salt, and pepper. Mix gently with your hands until just combined.
  2. Roll the mixture into 1-inch balls (about 16-18 meatballs). Place them on a plate or tray and set aside.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the meatballs in batches, cooking until golden brown on all sides, about 2-3 minutes per side. Remove and set aside.
  4. In the same skillet, melt butter over medium heat. Sprinkle the flour over the melted butter and whisk until smooth. Slowly pour in the chicken broth while whisking to avoid lumps.
  5. Stir in lemon juice and capers, letting the sauce simmer for 2 minutes until slightly thickened.
  6. Return the meatballs to the skillet, turning them to coat in the sauce. Simmer for 10 minutes, occasionally spooning sauce over the meatballs.
  7. Remove the skillet from heat and sprinkle fresh parsley over the top. Serve warm with crusty bread, pasta, or rice.

Notes

For a gluten-free option, substitute breadcrumbs with almond flour. Use fresh lemon juice and zest for the best flavor. You can prepare the meatballs ahead of time and store them in the fridge until ready to cook.
