Ultimate Pesto Grilled Cheese Sandwich

A gourmet twist on the classic grilled cheese sandwich, featuring gooey melted cheese, crispy bread, and fragrant basil pesto. Perfect for lunch, dinner, or even as a party appetizer.

Ingredients

  • Thick slices of sourdough or artisan bread (or gluten-free bread)
  • Unsalted butter, softened
  • Basil pesto (store-bought or homemade)
  • Mozzarella cheese
  • Provolone cheese
  • Optional: Tomato slices, cooked bacon, or avocado

Instructions

  1. Spread softened butter on one side of each bread slice. On the unbuttered side, evenly spread a layer of pesto.
  2. Layer mozzarella and provolone cheese on top of the pesto. Add optional ingredients like tomato slices, cooked bacon, or avocado if desired.
  3. Place another slice of bread on top, buttered side facing out.
  4. Heat a skillet or griddle over medium heat. Place the sandwiches in the pan and cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is fully melted.
  5. Use a spatula to gently flip the sandwich. If the bread sticks, add a little more butter to the pan.
  6. Slice the sandwiches in half and serve immediately while the cheese is gooey and warm.

Notes

Cook on medium heat for even browning and melting. Avoid overstuffing the sandwich to make flipping easier. Keep sandwiches warm in a 200°F oven if cooking multiple batches.
