  • 2 cups cooked ham, diced
  • 1 medium onion, diced
  • 2 cups shredded cheese (cheddar works best, or a mix like Colby Jack or Gruyère)
  • 2 cups milk (use whole milk for creaminess, or a dairy-free option if needed)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour (use gluten-free flour if preferred)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. Peel and slice the potatoes into thin rounds, about 1/8-inch thick. Use a mandoline slicer for even slices if available.
  3. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the flour and whisk until smooth to create a roux. Gradually pour in the milk while whisking continuously to prevent lumps. Add garlic powder, salt, and pepper to taste. Cook for 3-4 minutes, or until the sauce thickens slightly.
  4. Spread a thin layer of the sauce on the bottom of the baking dish. Arrange a layer of potato slices, followed by a layer of diced ham and onions. Sprinkle a handful of shredded cheese on top. Repeat the layers until all ingredients are used, finishing with a generous layer of cheese.
  5. Cover the dish with aluminum foil and bake for 40 minutes. Then, remove the foil and bake for an additional 20 minutes, or until the cheese is golden and bubbly and the potatoes are fork-tender.
  6. Let the casserole cool for 5-10 minutes before serving. Sprinkle with fresh parsley for garnish, if desired.
