  • 1 pound boneless sirloin or ribeye steak, cut into bite-sized pieces
  • 1 pound baby red or Yukon gold potatoes, halved or quartered
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional)

Instructions

  1. Preheat your grill to medium-high heat or oven to 400°F (200°C).
  2. In a mixing bowl, toss the halved potatoes with olive oil, salt, pepper, and half of the minced garlic.
  3. Add the steak pieces to the bowl with the potatoes. Sprinkle with onion powder, smoked paprika, salt, and pepper.
  4. Pour in the melted butter and toss everything gently to coat well.
  5. Tear off two large sheets of heavy-duty aluminum foil (about 12 by 18 inches each). Divide the steak and potato mixture evenly between the two sheets, placing it in the center.
  6. Fold the foil over and crimp the edges tightly to seal, leaving a small vent for steam to escape.
  7. Place the foil packets on the grill or on a baking sheet in the oven. Cook for 20-25 minutes, flipping once halfway through.
  8. Check doneness with a meat thermometer if desired: 135°F (57°C) for medium-rare or 145°F (63°C) for medium.
  9. Carefully open the foil packets and sprinkle chopped fresh parsley over the top.
  10. Serve immediately, spooning the garlic butter sauce over the steak and potatoes.

Notes

Use heavy-duty foil to prevent tearing and keep juices locked in. Cut ingredients evenly for uniform cooking. Seal packets tightly but leave a small vent to prevent sogginess. Let packets rest for 5 minutes after cooking to redistribute juices. If potatoes are not tender after 25 minutes, reseal and cook for an additional 5-10 minutes.
