Instructions

  1. Activate the yeast: In a small bowl, combine 1 cup (240 ml) of warm whole milk (about 110°F / 43°C) with 2 ¼ teaspoons (7 grams) active dry yeast and 1 tablespoon of sugar. Stir gently and let sit for 5-10 minutes until foamy.
  2. Mix dry ingredients: In a large mixing bowl, whisk together 4 cups (500 grams) all-purpose flour, ¼ cup (50 grams) sugar, and 1 teaspoon salt.
  3. Combine wet ingredients: Beat 2 large eggs at room temperature and add softened butter (4 tablespoons / 56 grams) and 2 tablespoons honey to the activated yeast mixture.
  4. Form the dough: Pour the wet ingredients into the dry, stirring with a wooden spoon or dough hook until a shaggy dough forms.
  5. Knead the dough: Turn onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic. (If using a stand mixer, knead with the dough hook on medium speed for 5-7 minutes.) The dough should be tacky but not sticky.
  6. First rise: Place dough in a greased bowl, cover with a damp towel or plastic wrap, and let rise in a warm spot for 1 to 1 ½ hours or until doubled in size.
