  • 3 cups cooked rice (preferably day-old, jasmine or basmati)
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 cup diced smoked ham
  • 2 eggs, lightly beaten
  • 3 tablespoons vegetable oil (canola or avocado oil)
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce (low-sodium preferred)
  • 1 teaspoon sesame oil
  • 2 green onions, sliced thin
  • Optional veggies: peas, diced carrots, or bell peppers

Instructions

  1. Dice the ham, pineapple, and any veggies you’re using. Prepare day-old rice and whisk the eggs in a small bowl.
  2. Heat 2 tablespoons of vegetable oil in a wok or skillet over medium-high heat until shimmering.
  3. Pour the beaten eggs into the hot pan. Scramble them until just set, breaking them into pieces. Remove and set aside.
  4. Add another tablespoon of oil, then sauté the garlic until fragrant, about 30 seconds. Be careful not to let it burn.
  5. Add the pineapple chunks and ham. Stir-fry for 2-3 minutes until the pineapple is slightly caramelized and the ham is heated through.
  6. Break up the rice with your hands to remove clumps and add it to the pan. Stir well to combine with the pineapple and ham.
  7. Drizzle the soy sauce and sesame oil over the rice. Stir-fry for another 3-4 minutes, ensuring the rice absorbs the flavors evenly.
  8. Return the scrambled eggs to the pan and toss everything together. Cook for an additional minute.
  9. Sprinkle sliced green onions on top before serving.
