These Soft & Chewy Cake Batter Cookies are a fun, colorful treat with a hint of cake flavor, perfect for celebrations or cozy nights in.

Ingredients

Scale
  • 1 box yellow cake mix
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 1/4 cup rainbow sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  2. In a large bowl, combine the cake mix and all-purpose flour. Stir well to remove any lumps.
  3. In a separate bowl, beat the softened butter until smooth. Add the egg and vanilla extract, mixing until light and fluffy.
  4. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until a soft dough forms.
  5. Gently stir in the rainbow sprinkles, being careful not to overmix.
  6. Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are just set. The centers will be slightly soft.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

[‘Chill the dough for 15-20 minutes if it feels sticky to prevent spreading.’, ‘Don’t overmix the dough to maintain a soft texture.’, ‘Experiment with mix-ins like chocolate chips, nuts, or crushed candy for variety.’]
