A comforting and flavorful dish combining tender chicken with creamy street corn, perfect for busy nights with minimal prep and cleanup.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup sweet corn kernels (fresh or canned; drain if using canned)
  • 4 ounces cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • Crumbled cotija cheese (optional, for topping)
  • Pickled jalapeños (optional, for a spicy twist)

Instructions

  1. Season chicken breasts with salt, pepper, and a sprinkle of chili powder. Place them into the bottom of your slow cooker.
  2. In a mixing bowl, combine cream cheese, mayonnaise, lime juice, garlic powder, ground cumin, and chili powder. Stir until smooth and creamy.
  3. Fold in the corn kernels to the creamy mixture, ensuring everything is evenly coated.
  4. Spread the creamy corn mixture over the chicken in the slow cooker, covering each piece completely.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and easy to shred.
  6. Sprinkle chopped cilantro and crumbled cotija cheese over the top before serving. Add pickled jalapeños for extra spice if desired.
  7. Serve the chicken with the creamy corn mixture over rice, in tortillas, or with a fresh salad.

Notes

[‘If the creamy mixture looks too thick after cooking, stir in a splash of milk or chicken broth to loosen it up.’, ‘Use fresh lime juice for better flavor.’, ‘Adjust salt if using cotija cheese, as it is naturally salty.’, ‘Prep the creamy mixture the night before for quicker assembly in the morning.’]
