Ingredients

Scale
  • 4 ham steaks (6 oz / 170 g each), thick-cut
  • 1/2 cup pineapple juice (120 ml), preferably fresh or 100% juice
  • 4 pineapple rings, canned or fresh, drained if canned
  • 1/4 cup brown sugar (50 g), packed
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons unsalted butter (28 g), softened
  • 1 tablespoon olive oil (15 ml)

Instructions

  1. Prep your ingredients: Measure pineapple juice, brown sugar, mustard, vinegar, garlic powder, and pepper. Drain pineapple rings if using canned.
  2. Make the glaze: In a small bowl, whisk together pineapple juice, brown sugar, Dijon mustard, apple cider vinegar, garlic powder, and black pepper until smooth.
  3. Heat the skillet: Place skillet over medium-high heat and add olive oil. Heat until shimmering but not smoking, about 2 minutes.
  4. Sear the ham steaks: Add ham steaks to the hot pan without crowding. Cook 3-4 minutes per side until golden brown and caramelized.
  5. Add butter and glaze: Lower heat to medium, add butter and let melt. Pour in glaze and stir gently to coat ham steaks evenly. Simmer about 5 minutes until sauce thickens.
  6. Add pineapple rings: Nestle pineapple rings around ham in pan. Cook 2-3 minutes per side until warmed through and slightly caramelized.
  7. Check for doneness: Ensure ham steaks are hot and glaze is sticky and glossy.
  8. Serve immediately: Transfer ham steaks and pineapple to plates, spoon extra glaze over top, and enjoy warm.

Notes

Use thick-cut ham steaks to keep them juicy. Don’t rush searing to develop a golden crust. Simmer glaze gently to avoid burning. If glaze thickens too much, add a splash of pineapple juice to loosen. For gluten-free, verify mustard and vinegar labels. Brown sugar can be swapped with coconut sugar for paleo. Fresh pineapple can brighten the glaze in summer.
