  • 1 pound (450g) Little Smokies sausages (Johnsonville recommended)
  • 8 slices bacon (thin or regular cut)
  • ½ cup (100g) packed brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey (optional)
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • Toothpicks (soaked in water to prevent burning)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with foil and place a wire rack on top if available.
  2. In a medium bowl, whisk together brown sugar, Dijon mustard, honey (if using), black pepper, and garlic powder until smooth and sticky.
  3. Wrap each little smokie in a half slice of bacon, cutting bacon slices if needed. Secure each wrap with a toothpick.
  4. Brush or spoon the brown sugar glaze generously over each wrapped smokie.
  5. Arrange the wrapped smokies on the wire rack or directly on the foil-lined baking sheet, spacing them evenly.
  6. Bake for 20–25 minutes, turning once halfway through. For extra crispiness, broil for 1–2 minutes watching closely to avoid burning.
  7. Remove from oven and let cool for 5 minutes to set the glaze.
  8. Serve warm.

Notes

Soak toothpicks in water for 10 minutes before using to prevent burning. Use thin bacon for easier wrapping and crispier results. Turn smokies halfway through baking for even crispness. If glaze thickens too much, brush on a little more honey or water. For thicker bacon, consider par-cooking before wrapping. Can be made gluten-free by using gluten-free sausages and mustard. Leftovers store well in the fridge for up to 3 days and reheat best in the oven to keep bacon crispy.
