Refreshing Strawberry Lemonade Vodka Slushies

A quick and easy summer drink combining fresh strawberries, lemon juice, vodka, and simple syrup blended into a smooth, icy slushie perfect for cooling off on hot days.

Ingredients

  • 2 cups fresh strawberries, hulled and sliced (about 300g)
  • ½ cup fresh lemon juice (from 34 lemons, about 120ml)
  • ¾ cup vodka (about 6 fl oz or 180ml)
  • ½ cup simple syrup (equal parts sugar and water, about 120ml; can substitute honey or agave)
  • 4 cups ice cubes (about 32 fl oz or 900g), crushed or cubed
  • Fresh mint leaves (optional, a few sprigs)

Instructions

  1. Wash and hull the fresh strawberries, then slice them roughly.
  2. Juice the lemons to get about ½ cup (120ml) of fresh lemon juice. Roll lemons on the countertop before juicing for more juice.
  3. If not pre-made, make simple syrup by combining equal parts sugar and water in a small saucepan. Heat gently until sugar dissolves, then cool.
  4. Add sliced strawberries, lemon juice, vodka, simple syrup, and ice cubes into a high-speed blender.
  5. Start blending on low speed, gradually increasing to high until you reach a smooth, icy slush consistency (about 2-3 minutes).
  6. If too thick, add a splash of cold water or more lemon juice; if too thin, add more ice or frozen strawberries.
  7. Taste and adjust sweetness or tartness by adding more simple syrup or lemon juice, then blend briefly again.
  8. Serve immediately in chilled glasses, garnished with fresh mint leaves or a lemon wheel. Optionally rim glasses with sugar before pouring.
