  • 4 cups fresh strawberries, hulled and sliced (about 600g)
  • 1 cup freshly squeezed lemon juice (about 45 medium lemons)
  • 1 cup simple syrup (240ml) – homemade or store-bought
  • 4 cups sparkling water (960ml), chilled
  • 2 cups cold water or lemonade (480ml) – optional
  • Ice cubes, plenty
  • Fresh mint leaves, a handful for garnish (optional)
  • Lemon slices for garnish

Instructions

  1. Rinse the strawberries under cold water, hull them, and slice into thin pieces. Slice 2 lemons into thin rounds for garnish, and juice the remaining lemons to get about 1 cup (240ml) of fresh lemon juice.
  2. Make simple syrup by combining equal parts sugar and water (1 cup each) in a small saucepan. Heat gently over medium heat, stirring until sugar dissolves completely. Let it cool before using.
  3. In a punch bowl, combine the sliced strawberries, fresh lemon juice, and cooled simple syrup. Stir gently and let sit for about 10 minutes to allow flavors to mingle and strawberries to infuse the syrup.
  4. Pour in 4 cups (960ml) of chilled sparkling water. If desired, add 2 cups (480ml) of cold water or lemonade to balance the flavors. Stir carefully to keep the fizz.
  5. Add plenty of ice cubes to keep the punch cool. Float lemon slices and fresh mint leaves on top for garnish. Optionally, add a handful of frozen berries for extra color and chill.
  6. Ladle the punch into glasses filled with ice and garnish with a sprig of mint or a lemon slice. Serve fresh and chilled.

Notes

Use freshly squeezed lemon juice for best flavor. Let strawberries macerate in syrup and lemon juice for at least 10 minutes to enhance flavor. Add sparkling water just before serving to keep fizz lively. Frozen strawberries can be used if fresh are unavailable. For a floral sweetness, substitute honey for simple syrup. To keep punch cold without dilution, freeze strawberries or lemon zest in ice cubes.
