A simple and refreshing mimosa bar featuring a strawberry lemonade base infused with fresh mint, sparkling lemonade, and chilled champagne. Perfect for summer parties and easy to customize for all guests.

  • 4 whole lemons, juiced (plus extra slices for garnish)
  • ½ cup granulated sugar (adjust to taste; can substitute honey or agave syrup)
  • 3 cups cold water
  • ½ cup fresh mint leaves, loosely packed (plus extra sprigs for garnish)
  • 1 liter sparkling lemonade (store-bought or homemade)
  • 1 bottle champagne or prosecco, chilled
  • Ice cubes as needed (optional: freeze mint leaves or strawberry slices in ice cubes)

Instructions

  1. In a mixing bowl, combine sliced strawberries, granulated sugar, and freshly squeezed lemon juice from 4 lemons. Use a muddler or wooden spoon to gently mash the strawberries, releasing their juices and mixing everything well. Let sit for about 10 minutes to macerate.
  2. Optional: Strain the macerated strawberry mixture through a fine mesh sieve into a pitcher, pressing gently to extract all juice for a smoother lemonade. Skip for a pulpy texture.
  3. Pour 3 cups of cold water into the pitcher. Add fresh mint leaves, bruising them lightly with your hands before adding to release aroma. Chill the lemonade base in the fridge for at least 30 minutes to infuse the mint.
  4. Set up the mimosa bar by arranging the chilled strawberry lemonade base, sparkling lemonade, and chilled champagne or prosecco on the table. Include bowls of sliced strawberries, lemon wheels, and mint sprigs as garnishes. Keep champagne chilled in an ice bucket or cooler.
  5. To serve, invite guests to fill glasses halfway with strawberry lemonade, top with sparkling lemonade, and finish with champagne. Garnish with fresh mint and a strawberry slice.

Notes

Do not pulverize strawberries too much to keep texture. Chill the lemonade base before serving to avoid watering down with ice. Add champagne last to keep fizz. Freeze strawberry slices or mint leaves in ice cubes for a decorative and cooling touch. For a smoother lemonade, strain the macerated mixture. Keep sparkling lemonade and champagne separate until serving to maintain fizz.
