A quick and easy mojito cocktail with fresh mint, lime, white rum, and club soda, perfect for summer nights and gatherings.

  • 10 fresh mint leaves, plus extra for garnish
  • 2 tablespoons (30 ml) fresh lime juice (from 2 medium limes)
  • 2 ounces (60 ml) white rum
  • 1 tablespoon (15 ml) simple syrup
  • 4 ounces (120 ml) chilled club soda
  • Crushed ice
  • Optional: pinch of sea salt

Instructions

  1. Fill a highball glass with crushed ice to chill it while you prep (about 5 minutes).
  2. Place 10 fresh mint leaves into the bottom of a sturdy glass or mixing cup. Add fresh lime juice and simple syrup. Gently muddle the mint leaves for 15-20 seconds to release aromatic oils without tearing them apart.
  3. Pour 2 ounces (60 ml) of white rum into the muddled mint-lime syrup mixture. Stir gently with a bar spoon for about 10 seconds.
  4. Discard the ice from the chilled highball glass and fill it with fresh crushed ice. Strain the mint-rum mixture over the ice using a fine mesh strainer if desired.
  5. Top with approximately 4 ounces (120 ml) of chilled club soda. Stir gently to lift the mint leaves and mix the drink.
  6. Garnish with a sprig of fresh mint and a thin lime wheel or wedge on the rim. Optionally, add a pinch of sea salt on top to brighten the flavors.

Notes

Be gentle when muddling mint to avoid bitterness. Use fresh lime juice for best flavor. Prepare the mint-lime-rum base ahead but add club soda and ice just before serving to keep fizz fresh. Crushed ice chills faster and dilutes slightly; cubed ice lasts longer.
