  • 810 fresh mint leaves, gently torn
  • 2 ounces (60 ml) dry gin (e.g., Tanqueray or Bombay Sapphire)
  • 1 ounce (30 ml) elderflower syrup (e.g., St-Germain or Monin)
  • Juice of half a lime
  • 34 ounces (90120 ml) sparkling water or club soda
  • Ice cubes, enough to fill the glass
  • Optional garnish: thin cucumber ribbons or a sprig of mint

Instructions

  1. Thinly slice about 1/4 of a medium cucumber and gently tear 8-10 fresh mint leaves. Cut a lime in half and squeeze out fresh juice from half.
  2. In a cocktail shaker or mixing glass, place the cucumber slices and mint leaves. Use a muddler or the back of a wooden spoon to gently press and twist for about 30 seconds to release oils and juice without pulverizing the mint.
  3. Add 2 ounces (60 ml) dry gin, 1 ounce (30 ml) elderflower syrup, and fresh lime juice to the shaker. Fill with ice to chill the ingredients.
  4. Shake vigorously for 10-15 seconds or stir gently for about 20 seconds if using a mixing glass.
  5. Fill a highball or Collins glass with fresh ice cubes.
  6. Strain the cocktail mixture over the ice, leaving behind muddled bits.
  7. Top with 3-4 ounces (90-120 ml) chilled sparkling water or club soda. Stir gently to combine without losing fizz.
  8. Garnish with thin cucumber ribbons or a sprig of mint and serve immediately.
