Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss 4 cups of mixed fresh fruit with ½ cup granulated sugar, 1 tablespoon lemon juice, 1 teaspoon vanilla extract, 2 tablespoons cornstarch, and ½ teaspoon ground cinnamon if using. Mix gently until fruit is evenly coated. Set aside to macerate.
  3. In a medium bowl, whisk together 1 cup all-purpose flour, 1 tablespoon baking powder, ¼ teaspoon salt, and 2 tablespoons granulated sugar.
  4. Add 6 tablespoons cold, cubed unsalted butter to the flour mixture. Using a pastry cutter or two knives, cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized bits of butter.
  5. Pour in ⅓ cup milk and stir gently just until the dough comes together—do not overmix.
  6. Pour the fruit filling into a greased 9×9-inch baking dish, spreading it evenly.
  7. Dollop spoonfuls of the biscuit topping over the fruit, leaving some gaps for steam to escape.
  8. Bake for 30–35 minutes, or until the topping is golden brown and the fruit filling is bubbling at the edges. If the topping browns too quickly, loosely cover with foil halfway through baking.
  9. Let the cobbler rest for 10–15 minutes before serving.
