  • 2 ounces sharp cheddar cheese or preferred melting cheese, sliced or shredded
  • Thin slices deli ham or turkey (optional)
  • Thin spread of mustard or mayo (yellow mustard or garlic mayo recommended)
  • Pickles or jalapeños (optional)
  • Pinch of black pepper
  • Sprinkle of smoked paprika

Instructions

  1. Prep Your Ingredients (5 minutes): Spread a thin, even layer of softened butter on one side of each bread slice. This buttered side will be the outer crust.
  2. Layer the Sandwich (2 minutes): On the unbuttered side of one slice, add cheese (about 2 ounces). Top with deli meat if using, then a light spread of mustard or mayo. Add pickles or jalapeños, and sprinkle black pepper and smoked paprika.
  3. Close and Heat (8 minutes): Place the other slice of bread on top, buttered side facing out. Heat skillet over medium-low heat. Cook sandwich about 4 minutes on first side until deep golden brown and crispy.
  4. Flip Carefully (4 minutes): Flip sandwich gently and cook other side 3-4 minutes until golden and cheese melts. Cover pan with lid for 1 minute to help cheese melt faster.
  5. Rest and Serve (1 minute): Remove sandwich from pan and let rest for 1 minute before slicing to allow cheese to set.

Notes

Butter the bread, not the pan, for even browning. Cook on medium-low heat to avoid burning and ensure cheese melts. Cover pan briefly to help cheese melt faster. Use sturdy bread to prevent sogginess. For reheating leftovers, toast again in skillet or toaster oven; avoid microwave.
