  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1 cup unsweetened pumpkin puree
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice (blend of cinnamon, nutmeg, ginger, and cloves)
  • 24 ladyfingers
  • 1 cup espresso or strong coffee, cooled
  • 2 tablespoons rum or coffee liqueur (optional)
  • 2 tablespoons cocoa powder (for dusting)

Instructions

  1. Prepare the coffee: Brew a strong pot of espresso or coffee, and let it cool. Add the rum or coffee liqueur if using.
  2. Whip the cream: In a mixing bowl, whip the heavy cream until soft peaks form. Set aside.
  3. Make the mascarpone filling: In another bowl, combine mascarpone cheese, pumpkin puree, powdered sugar, vanilla extract, and pumpkin spice. Mix until smooth and creamy.
  4. Fold in the whipped cream: Gently fold the whipped cream into the mascarpone mixture until fully combined. Be careful not to deflate the cream.
  5. Dip the ladyfingers: Quickly dip each ladyfinger into the cooled coffee mixture, ensuring they’re soaked but not falling apart.
  6. Layer the tiramisu: Spread a thin layer of the mascarpone mixture at the bottom of your baking dish. Add a layer of coffee-soaked ladyfingers, followed by more mascarpone mixture. Repeat until all ingredients are used, ending with a mascarpone layer.
  7. Dust with cocoa powder: Use a sifter to evenly sprinkle cocoa powder on top.
  8. Chill: Cover the dish and refrigerate for at least 4 hours or overnight for the flavors to meld.
