Instructions

  1. In a large bowl, beat unsalted butter with powdered sugar until light and fluffy (about 2-3 minutes).
  2. Mix in pumpkin puree and vanilla extract. Beat until well combined.
  3. Sprinkle in pumpkin pie spice, cinnamon, and salt. Mix just until incorporated.
  4. In a separate bowl, whisk together flour and cornstarch. Gradually add to the wet mixture, mixing on low speed until a soft dough forms. If dough is too wet, add 1-2 tbsp extra flour.
  5. Wrap dough in plastic wrap and chill for at least 30 minutes.
  6. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  7. On a lightly floured surface, roll out dough to about 1/4 inch thickness. Cut out shapes with a cookie cutter.
  8. Place cookies about 1 inch apart on prepared baking sheet. Bake for 12-15 minutes, until edges are just golden.
  9. Transfer cookies to a wire rack and let cool completely.
  10. For the glaze (optional): Combine powdered sugar, milk, and pumpkin pie spice. Drizzle over cooled cookies and let set for 20 minutes.
