  • 1 cup brown sugar
  • 1/4 cup pure maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup pumpkin puree
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon pumpkin spice blend
  • Optional: 1/2 cup chopped pecans or walnuts
  • Optional: 1/2 cup white chocolate chips
  • Optional: Drizzle of maple icing

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Melt the butter in a microwave-safe bowl or on the stovetop and let it cool slightly.
  3. In a large bowl, whisk together the melted butter, brown sugar, maple syrup, egg, vanilla extract, and pumpkin puree until smooth and well combined.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and pumpkin spice blend.
  5. Gradually add the dry ingredients to the wet ingredients, folding gently with a spatula. Be careful not to overmix.
  6. If using nuts or chocolate chips, fold them into the batter at this stage.
  7. Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
  9. Let the blondies cool completely in the pan before slicing into squares.
  10. Serve as-is or with a drizzle of maple icing for extra flair.
