  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar, packed
  • 1 cup (240g) canned pumpkin puree (not pumpkin pie filling)
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt. Set aside.
  3. In another bowl, combine the sugars, pumpkin puree, vegetable oil, eggs, and vanilla extract. Whisk until smooth.
  4. Gradually fold the dry ingredients into the wet mixture using a spatula. Mix until just combined—be careful not to overmix.
  5. In a medium bowl, beat the cream cheese, sugar, egg, and vanilla extract until smooth and creamy.
  6. Fill each muffin cup about 2/3 full with pumpkin batter. Add a dollop of cheesecake filling to the center, then use a toothpick to gently swirl it into the batter.
  7. Place the muffin tin in the oven and bake for 18-22 minutes, or until a toothpick inserted into the muffin (not the cheesecake) comes out clean.
  8. Allow muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Make sure your cream cheese and eggs are at room temperature for a smooth cheesecake filling. Avoid overmixing the batter to keep the muffins light and fluffy. Swirl the cheesecake filling gently for the best visual effect.
