  • 1/2 teaspoon lemon juice or vinegar (optional)

Instructions

  1. Drain 4 tablespoons (60 ml) of chickpea liquid from a can. If thin, simmer gently until reduced by half, then cool completely.
  2. Pour aquafaba into a cold, grease-free metal or glass bowl. Add 1/4 teaspoon cream of tartar. Whip with an electric mixer on medium speed for 5-7 minutes until soft peaks form.
  3. Add 1 teaspoon vanilla extract and 1/2 teaspoon lemon juice or vinegar if using. Continue whipping for 2-3 minutes until firm peaks form and mixture is glossy.
  4. Gradually sift 2 cups (240 g) powdered sugar, about 1/3 cup at a time, folding gently with a spatula after each addition until smooth and combined.
  5. Check consistency: if too stiff, add a teaspoon of water or plant-based milk; if too thin, add more powdered sugar a tablespoon at a time.
  6. Use immediately to frost cooled sugar cookies. For detailed designs, transfer frosting into a piping bag with a small round tip and work quickly.
  7. Let frosted cookies rest at room temperature for at least 2 hours or overnight to harden to a crisp shell.
