  • 1/2 cup (50g) unsweetened cocoa powder
  • 1 teaspoon baking powder

  • 1/2 cup (120ml) vegetable oil
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) buttermilk
  • 1/2 cup (150g) raspberry jam
  • 1 teaspoon lemon juice (optional)
  • 1 cup (240ml) heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Red gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the oil, sugar, eggs, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix just until combined.
  5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  6. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean. Let the cupcakes cool completely.
  7. Stir the raspberry jam and lemon juice (if using) until smooth.
  8. Use a knife to cut small holes in the center of each cupcake (about 1/2 inch deep). Fill each hole with the jam mixture using a piping bag or spoon.
  9. Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  10. Pipe the whipped cream frosting onto the cupcakes. Add two small ‘bite marks’ using the red gel food coloring and a small piping tip.
