This sugar cookie frosting recipe creates a smooth, pipeable frosting that hardens perfectly for crisp edges and clean lines, ideal for decorating cookies with confidence.

Ingredients

Scale
  • 4 cups powdered sugar (about 480 g), sifted
  • 2 tablespoons meringue powder
  • 5 to 6 tablespoons water (7590 ml)
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Sift the powdered sugar and meringue powder together into your mixing bowl to remove lumps.
  2. Add 5 tablespoons of water and the vanilla extract into the bowl. Using a mixer on low speed, blend to incorporate; mixture will be thick and gritty at first.
  3. Increase mixer speed to medium and beat for 5-7 minutes until frosting is glossy, smooth, and forms soft peaks. If too thick to pipe, add remaining tablespoon of water gradually.
  4. Test consistency by lifting beaters; frosting should hold a peak but remain soft enough to pipe. Adjust by adding powdered sugar if too runny or water if too stiff.
  5. Transfer frosting to piping bags fitted with desired tips using a spatula.
  6. Pipe your designs, practicing on parchment paper if desired. The frosting holds shape and dries firm within a few hours at room temperature.
  7. Let decorated cookies dry on a flat surface for 4-6 hours or overnight to harden fully. Avoid stacking until completely dry.

Notes

Use meringue powder for best hardening results; substitute with pasteurized egg whites cautiously. Let frosting dry at room temperature for several hours or overnight for a firm finish. Use gel food coloring to avoid thinning the frosting. Store unused frosting covered tightly or refrigerated up to one week, stirring before use.
