  • 1/2 cup (113g) unsalted butter, cold and cubed
  • 1/4 cup (60ml) ice water
  • 1/4 tsp salt
  • 3/4 cup (180ml) honey
  • 1/2 cup (120ml) heavy cream
  • 1/4 cup (50g) granulated sugar
  • 3 large eggs, room temperature
  • 2 tbsp (30ml) melted unsalted butter
  • 1 tbsp (15ml) vanilla extract
  • 1/2 tsp sea salt (plus extra for sprinkling)

Instructions

  1. In a large mixing bowl, combine the flour and salt. Add the cold, cubed butter and use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, one tablespoon at a time, mixing gently until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Preheat your oven to 375°F (190°C).
  4. Roll out the chilled dough on a floured surface until it’s about 1/8 inch thick. Carefully transfer it to your pie dish, trimming and crimping the edges as desired. Chill the crust in the fridge while you prepare the filling.
  5. In a medium bowl, whisk together the honey, heavy cream, sugar, eggs, melted butter, vanilla extract, and sea salt until smooth and fully combined.
  6. Pour the filling into the chilled crust and bake for 40-45 minutes, or until the filling is set but slightly jiggly in the center. The edges will be golden, and the surface will have a light caramelized sheen.
  7. Remove the pie from the oven and let it cool completely on a wire rack before serving.
