  • ½ cup (100g) granulated sugar
  • ¼ cup (85g) honey
  • 1 egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • ½ teaspoon baking soda
  • Flaky sea salt for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, cream together ½ cup unsalted butter and ½ cup granulated sugar until fluffy and pale, about 2-3 minutes.
  3. Add ¼ cup honey, 1 egg, and 1 teaspoon vanilla extract. Mix until fully combined.
  4. In a separate bowl, whisk together 1 ½ cups all-purpose flour and ½ teaspoon baking soda.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until the dough comes together. Avoid overmixing.
  6. Drop spoonfuls of dough (about 1 ½ tablespoons each) onto the prepared baking sheets, spacing them 2 inches apart.
  7. Sprinkle a small pinch of flaky sea salt over each cookie before baking.
  8. Bake for 10-12 minutes, or until the edges are golden brown and the centers look just set.
  9. Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
