  • Bone-in fully cooked ham (about 8-10 lbs / 3.6-4.5 kg), spiral-sliced recommended
  • 1 cup (340 g) honey, raw or wildflower
  • 1/2 cup (100 g) brown sugar
  • 2 tablespoons (30 ml) Dijon mustard
  • 2 tablespoons (30 ml) apple cider vinegar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 cup (60 ml) water
  • Whole cloves (optional, for studding the ham)

Instructions

  1. Preheat your oven to 325°F (165°C). Allow the ham to sit at room temperature for 30 minutes before roasting.
  2. Score the ham with shallow, diamond-shaped cuts about 1/8 inch (3 mm) deep. Optionally, stud the intersections with whole cloves.
  3. In a small saucepan over medium heat, combine honey, brown sugar, Dijon mustard, apple cider vinegar, water, and spices (cinnamon, ground cloves, nutmeg, ginger).
  4. Simmer the glaze, stirring constantly, until sugar dissolves and glaze thickens slightly, about 5-7 minutes. Remove from heat and set aside.
  5. Place the ham flat side down in a roasting pan. Brush a generous layer of glaze over the entire ham, including the scored cuts.
  6. Tent the ham loosely with foil and bake for 1.5 to 2 hours, basting every 20 minutes with more glaze. The internal temperature should reach 140°F (60°C).
  7. Remove the foil during the last 20 minutes to let the glaze caramelize and develop a sticky crust. Tent again if browning too fast.
  8. Let the ham rest for 15-20 minutes after removing from the oven to lock in juices.
  9. Slice and serve warm or at room temperature.

Notes

Let the ham rest at room temperature before roasting for even cooking. Score shallowly to allow glaze absorption without drying out the meat. Use a meat thermometer to avoid overcooking. Baste every 20 minutes for a sticky, flavorful glaze. Tent with foil during most of cooking to keep moist, uncover last 20 minutes to caramelize glaze. Glaze can be made a day ahead and refrigerated.
