  • ½ cup (115g) unsalted butter, chilled and cubed

  • 1 cup (240g) apple butter
  • ½ cup (120ml) heavy cream
  • ½ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Make the crust: In a mixing bowl, combine the flour and salt. Add the chilled, cubed butter and use a pastry cutter to blend until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  2. Prepare the filling: In a mixing bowl, whisk together the apple butter, heavy cream, sugar, eggs, cinnamon, nutmeg, and vanilla extract until smooth and well combined.
  3. Roll out the crust: Preheat your oven to 375°F (190°C). Roll out the chilled dough on a lightly floured surface into a circle about 12 inches in diameter. Carefully transfer the dough to your pie dish and trim any excess, leaving a 1-inch overhang. Crimp the edges to make a decorative border.
  4. Bake the crust: Line the pie crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment and bake for another 5 minutes.
  5. Add the filling: Pour the apple butter mixture into the pre-baked crust. Smooth the top with a spatula.
