  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for pan-frying
  • Optional: Lemon wedges and fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Using a meat mallet, pound the chicken breasts to about ½-inch thickness for even cooking.
  3. Set up a dredging station with three shallow bowls: one with flour, one with whisked eggs, and one with Parmesan, breadcrumbs, garlic powder, salt, and pepper.
  4. Coat each chicken breast in the flour, then dip it into the egg, and finally press it into the Parmesan-breadcrumb mixture until fully coated.
  5. Heat a large skillet over medium heat and add enough olive oil to coat the bottom.
  6. Cook the chicken breasts for 2-3 minutes per side, or until golden brown. Work in batches if necessary.
  7. Transfer the chicken to a baking sheet and finish cooking in the preheated oven for 8-10 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Remove from the oven and let the chicken rest for 2-3 minutes before serving.
