  • 1/2 cup shredded mozzarella cheese (60g)
  • 2 large eggs, beaten
  • 1/3 cup almond flour (35g) (or 2 tablespoons coconut flour for nut-free)
  • 2 tablespoons grated Parmesan cheese (15g)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, freshly ground
  • Optional: 1 tablespoon chopped fresh herbs (parsley or chives)
  • Optional: 1/4 teaspoon crushed red pepper flakes
  • Optional: 2 tablespoons bacon bits, cooked and crumbled

Instructions

  1. Prep the broccoli: If using fresh broccoli, chop florets finely until you have about 2 cups. For frozen, thaw completely and squeeze out excess moisture before chopping.
  2. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  3. In a mixing bowl, combine chopped broccoli, cheddar cheese, mozzarella cheese, beaten eggs, almond flour, Parmesan, garlic powder, onion powder, salt, and black pepper. Add any optional herbs, red pepper flakes, or bacon bits if desired.
  4. Stir everything together with a spatula or clean hands until the mixture is uniform and just sticks together. If too loose, add another tablespoon of almond flour.
  5. Using a cookie scoop or heaping tablespoon, portion the mixture onto the lined baking sheet. Flatten each mound gently into a disc about 2.5 inches wide and 1/2 inch thick.
  6. Bake for 15-18 minutes, or until golden brown around the edges and set in the middle.
  7. Let the rounds cool on the baking sheet for 3-5 minutes before transferring to a wire rack.
  8. Serve warm for maximum gooeyness, or let cool to room temperature for a firmer, portable snack.

Chop broccoli finely and squeeze out excess moisture for best texture. For extra crispiness, broil for 1-2 minutes at the end or use an air fryer at 375°F for 10-12 minutes.
