  • ¾ cup (150 g) granulated sugar
  • ½ cup (113 g) unsalted butter, softened
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup (180 ml) buttermilk, at room temperature
  • 1 teaspoon fresh lemon zest (optional)
  • 4 ounces (113 g) cream cheese, softened
  • ½ cup (120 g) marshmallow fluff
  • ¼ cup (57 g) unsalted butter, softened
  • 1 ½ cups (180 g) powdered sugar, sifted
  • ½ teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, sift together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar with a mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, fully incorporating each before adding the next. Mix in vanilla extract and lemon zest.
  5. Reduce mixer speed to low. Alternately add dry ingredients and buttermilk in three parts, beginning and ending with dry ingredients. Mix just until combined.
  6. Drop rounded tablespoons of batter onto prepared baking sheets about 2 inches apart, making roughly 24 rounds.
  7. Bake for 12-14 minutes until tops are springy and a toothpick comes out clean. Cool on sheets for 5 minutes, then transfer to cooling racks.
  8. For the filling, beat cream cheese and softened butter until smooth. Add marshmallow fluff, powdered sugar, vanilla extract, and lemon juice. Beat until fluffy and creamy.
  9. Pair whoopie pie rounds by size. Spread 1-2 tablespoons of filling on the flat side of one cake and top with its partner. Press gently to spread filling evenly.
  10. Chill assembled whoopie pies in the fridge for at least 30 minutes before serving.

Notes

Use room temperature eggs and butter for best results. Do not overmix batter to keep it light. Chill pies before serving to set filling and meld flavors. For dairy-free or gluten-free versions, substitute ingredients as suggested. Avoid overbaking to maintain tender texture.
