  • 1 packet taco seasoning
  • 1 can refried beans (15 oz)
  • 68 flour tortillas
  • 1 cup salsa
  • 1 cup sour cream
  • 2 cups shredded cheese (cheddar and Monterey Jack mix)
  • Optional toppings: fresh cilantro, diced tomatoes, jalapeños, avocado slices

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a skillet, brown the ground beef over medium heat. Drain excess grease, then stir in taco seasoning and a splash of water. Cook until fully coated and fragrant.
  3. In a bowl, mix refried beans with 2 tablespoons of salsa.
  4. Spread a thin layer of salsa on the bottom of the baking dish. Add a tortilla, followed by layers of refried beans, seasoned beef, sour cream, shredded cheese, and a drizzle of salsa. Repeat until all ingredients are used, finishing with a top layer of cheese.
  5. Cover the dish with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and slightly golden.
  6. Let the casserole sit for 5 minutes before slicing and serving.

Let the casserole rest for 5 minutes before slicing to help the layers hold together. Customize the spice level by adjusting taco seasoning and salsa heat.
