  • 4 medium russet potatoes, peeled and diced
  • 2 large carrots, peeled and sliced
  • 2 stalks celery, finely chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese (optional, for topping)
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 2 tablespoons flour

Instructions

  1. Peel and dice the potatoes, slice the carrots, chop the celery, and dice the onion and ham. Mince the garlic.
  2. Add the potatoes, carrots, celery, onion, garlic, and ham to the slow cooker. Pour in the chicken broth and stir to combine.
  3. Set the slow cooker to low and cook for 6-7 hours, or on high for 3-4 hours, until the vegetables are tender.
  4. Melt the butter in a small saucepan over medium heat. Stir in the flour and cook for 1-2 minutes to create a roux.
  5. Gradually whisk in the heavy cream, ensuring no lumps remain. Cook until the mixture thickens, about 5 minutes.
  6. Pour the cream mixture into the slow cooker and stir well. Let it cook for another 20-30 minutes to thicken the soup.
  7. Season with salt and pepper to taste, then ladle into bowls and top with shredded cheddar cheese if desired.

Notes

For a gluten-free version, use cornstarch instead of flour to thicken the soup. Adjust seasoning to taste before serving.
