  • 4 large russet potatoes, peeled and thinly sliced
  • 2 cups shredded sharp cheddar cheese
  • 1 medium onion, finely chopped
  • 2 cloves minced garlic
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tablespoons unsalted butter, melted
  • Salt, pepper, and a pinch of paprika
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Wash and peel the potatoes, then slice them thinly (about 1/8 inch thick). Dice the ham into bite-sized cubes, and chop the onion finely.
  2. In a mixing bowl, whisk together the heavy cream, chicken broth, melted butter, minced garlic, and seasonings (salt, pepper, paprika). Set aside.
  3. Grease the inside of your slow cooker with butter or cooking spray. Start by arranging a layer of potato slices at the bottom, followed by a sprinkle of onions, ham, and shredded cheese. Repeat the layers until all ingredients are used, finishing with a generous layer of cheese on top.
  4. Pour the cream sauce evenly over the layered ingredients, ensuring it seeps through to the bottom.
  5. Cover the slow cooker with its lid and set it to cook on low for 6-7 hours or high for 3-4 hours. The potatoes should be fork-tender, and the cheese melted and bubbly.
  6. Once done, sprinkle fresh parsley on top for a pop of color and extra flavor. Serve warm and enjoy!
