  • Sharp cheddar cheese, grated
  • Gruyere cheese, grated
  • 1 cup heavy cream
  • 1 cup milk
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 onion, thinly sliced
  • Salt and pepper, to taste
  • Fresh thyme (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Peel and thinly slice the potatoes (about 1/8-inch thick). Dice the ham and set aside.
  2. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 30 seconds. Stir in the flour and cook for 1 minute, whisking constantly.
  3. Gradually whisk in the heavy cream and milk, ensuring there are no lumps. Cook for 2-3 minutes until the sauce thickens slightly. Season with salt, pepper, and fresh thyme.
  4. Grease your baking dish and start layering. Begin with a layer of potatoes, followed by ham, sauce, and cheese. Repeat until all ingredients are used, finishing with a generous layer of cheese.
  5. Cover the dish with aluminum foil and bake for 40 minutes. Remove the foil and bake uncovered for an additional 15-20 minutes, or until the top is golden and bubbling.
  6. Allow the dish to cool for 5-10 minutes before serving.

Notes

Let the dish rest after baking for easier slicing. For extra browning, broil the dish for 2-3 minutes after baking. Freshly grated cheese melts better than pre-shredded cheese.
