  • 1 lb Italian sausage (mild or spicy)
  • 12 oz cheese tortellini (fresh or frozen)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 3 garlic cloves, minced
  • 1 small yellow onion, diced
  • 2 medium carrots, thinly sliced
  • 2 cups fresh baby spinach
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp Italian seasoning

Instructions

  1. Dice the onion, mince the garlic, thinly slice the carrots, and chop the spinach. Set aside.
  2. Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the sausage and cook until browned, breaking it into smaller pieces. Remove and set aside.
  3. In the same pot, add another tablespoon of olive oil. Sauté the onion, garlic, and carrots for 4-5 minutes until the onions are translucent.
  4. Pour in the chicken broth and stir in Italian seasoning, salt, and pepper. Bring to a gentle simmer.
  5. Add the tortellini and cook according to package instructions (5-7 minutes for fresh, 10 minutes for frozen).
  6. Lower the heat and stir in the spinach until wilted. Slowly pour in the heavy cream, stirring continuously.
  7. Return the cooked sausage to the pot and stir. Heat through for 2-3 minutes.
  8. Taste and adjust seasoning as needed. Simmer longer for a thicker soup if desired.
  9. Serve hot, garnished with Parmesan cheese or parsley.

Notes

For a lighter option, substitute heavy cream with half-and-half. Avoid overcooking the tortellini to prevent it from becoming mushy.
