  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • Optional mix-ins: chocolate chips, chopped nuts, or white chocolate chunks

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a microwave-safe bowl, melt the unsalted butter and let it cool slightly.
  3. In a large mixing bowl, whisk together the melted butter, brown sugar, granulated sugar, pumpkin puree, egg, and vanilla extract until smooth.
  4. In a separate bowl, sift together the flour, baking powder, pumpkin pie spice, and salt.
  5. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Be careful not to overmix.
  6. If using chocolate chips or nuts, fold them into the batter at this stage.
  7. Pour the batter into the prepared pan, spreading it out evenly with the spatula.
  8. Place the pan in the oven and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the blondies cool in the pan for about 10 minutes, then transfer them to a cooling rack using the parchment overhang.
  10. Once cooled completely, slice into squares and enjoy!

Notes

Let the egg and pumpkin puree come to room temperature for smoother blending. Avoid overmixing to ensure a chewy texture. Tent the pan with foil during the last 10 minutes of baking if the edges brown too quickly.
