These pecan pie bars feature a buttery shortbread crust and a gooey pecan filling, offering all the flavors of classic pecan pie in a portable, shareable format.

  • 1 cup (226 g) unsalted butter, melted and slightly cooled
  • 2 cups (250 g) all-purpose flour
  • 1/2 cup (100 g) granulated sugar
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup (200 g) packed brown sugar
  • 1/2 cup (120 ml) light corn syrup
  • 1/4 cup (60 g) unsalted butter, melted
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1 1/2 cups (180 g) chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a mixing bowl, combine the melted butter, flour, sugar, and salt until a dough forms. Press this mixture evenly into the prepared pan. Bake for 15 minutes, or until lightly golden.
  3. While the crust is baking, whisk together the eggs, brown sugar, corn syrup, melted butter, vanilla extract, and salt in a large mixing bowl. Stir in the chopped pecans until evenly coated.
  4. Pour the filling over the warm crust, spreading it evenly with a spatula. Return the pan to the oven and bake for 30-35 minutes, or until the filling is set but still slightly jiggles in the center.
  5. Remove the pan from the oven and let the bars cool completely in the pan.
  6. Once cooled, use the parchment paper overhang to lift the bars out of the pan. Slice into squares or rectangles and enjoy!
