This Mediterranean Tuna Salad is packed with vibrant flavors, wholesome ingredients, and is perfect for a quick summer lunch or dinner. Light yet filling, it’s like dining seaside in Greece.

Ingredients

  • 2 cans of tuna packed in olive oil (albacore or yellowfin recommended)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, peeled and chopped
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons extra virgin olive oil
  • Juice of half a lemon
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Drain the canned tuna and flake it into bite-sized chunks using a fork. Set aside.
  2. Slice the cherry tomatoes in half. Peel and chop the cucumber into bite-sized chunks. Thinly slice the red onion and chop the parsley finely.
  3. Add the tuna, tomatoes, cucumber, olives, red onion, parsley, and crumbled feta cheese to a large mixing bowl.
  4. In a separate small bowl, whisk together 2 tablespoons of extra virgin olive oil, the juice of half a lemon, and 1 teaspoon of Dijon mustard. Season with salt and pepper to taste.
  5. Pour the dressing over the salad ingredients. Using tongs or salad servers, gently toss everything together until evenly coated.
  6. Let the salad sit for 5-10 minutes to allow the flavors to meld.
  7. Taste and adjust seasoning if needed. Add a sprinkle of extra parsley or a drizzle of olive oil on top for presentation.
