  • 2 cups cooked ham, diced or shredded
  • 12 ounces egg noodles, cooked al dente
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups whole milk
  • 4 ounces cream cheese
  • 1 ½ cups shredded cheddar cheese
  • 1 small onion, finely diced
  • 1 cup frozen peas (optional)
  • ½ cup breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Add the egg noodles and cook until al dente (about 6-7 minutes). Drain and set aside.
  3. In a medium saucepan, melt 4 tablespoons of butter over medium heat. Stir in 4 tablespoons of flour and cook for 1-2 minutes, whisking constantly.
  4. Slowly pour in 2 cups of milk, whisking until smooth. Cook until thickened (about 5 minutes).
  5. Reduce the heat to low. Stir in 4 ounces of cream cheese and 1 ½ cups of shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.
  6. In a large mixing bowl, toss the cooked noodles, diced ham, diced onion, and frozen peas (if using) with the cheese sauce until evenly coated.
  7. Pour the mixture into a greased 9×13-inch baking dish. Spread it out evenly.
  8. Melt 2 tablespoons of butter and mix with ½ cup of breadcrumbs. Sprinkle evenly over the casserole.
  9. Place the casserole in the oven and bake for 25-30 minutes, or until bubbly and golden brown on top.
  10. Let the casserole rest for 5-10 minutes before serving. Serve warm and enjoy!
