Irresistible Jalapeño Cheddar Tuna Melt

A quick and flavorful lunchtime upgrade featuring creamy tuna, gooey cheddar cheese, and spicy jalapeños on perfectly toasted bread.

Ingredients

  • 1 can solid white albacore tuna, drained and flaked
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 cup cheddar cheese, freshly grated
  • 2 tablespoons jalapeños, freshly sliced or pickled
  • 2 tablespoons green onions, thinly sliced
  • Salt and pepper to taste
  • 2 tablespoons butter, softened
  • 4 slices sourdough, whole wheat, or white sandwich bread

Instructions

  1. In a mixing bowl, combine the drained, flaked tuna, mayonnaise, Dijon mustard, sliced green onions, and a pinch of salt and pepper. Mix until well combined.
  2. Spread a thin layer of softened butter on one side of each slice of bread.
  3. Place a slice of bread butter-side down on a clean surface or plate. Spread a generous layer of the tuna salad on top. Add a layer of sliced jalapeños, followed by a handful of grated cheddar cheese. Top with another slice of bread, butter-side up.
  4. Preheat a skillet or griddle over medium heat for a couple of minutes.
  5. Place the assembled sandwich in the skillet and cook for 3–4 minutes per side, pressing gently with a spatula. The bread should turn golden brown, and the cheese should melt into gooey perfection.
  6. Remove from the skillet, slice in half, and serve immediately.
