Ingredients

Scale
  • 12 ounces egg noodles
  • 2 cups diced cooked ham
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup chicken broth
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 diced onion
  • 2 cloves minced garlic
  • 1 cup thawed frozen peas
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your 9×13-inch baking dish with cooking spray or a thin layer of butter.
  2. Bring a large pot of salted water to a boil. Add 12 ounces of egg noodles and cook until al dente, about 6-7 minutes. Drain and set aside.
  3. In a large skillet, melt 3 tablespoons of unsalted butter over medium heat. Add 1 diced onion and sauté until softened, about 3-4 minutes.
  4. Add 2 cloves of minced garlic to the skillet and cook for another minute, stirring frequently to prevent burning.
  5. Sprinkle 3 tablespoons of all-purpose flour over the onion and garlic mixture, stirring constantly to create a paste.
  6. Gradually whisk in 2 cups of milk and 1 cup of chicken broth. Continue whisking until the mixture thickens, about 4-5 minutes.
  7. Stir in 2 cups of shredded cheddar cheese and 1/2 cup of grated Parmesan cheese. Season with salt and pepper to taste. Remove from heat.
  8. In a large mixing bowl, combine the cooked noodles, diced ham, thawed peas, and the cheese sauce. Mix until everything is evenly coated.
  9. Transfer the mixture to the prepared baking dish. Smooth out the top with a spatula.
  10. Optional: Sprinkle breadcrumbs evenly over the top for added crunch.
  11. Bake the casserole in the preheated oven for 20-25 minutes, or until bubbly and golden brown on top.
  12. Let the casserole cool for 5 minutes before serving. Enjoy!
