  • 1 pound dried beans (navy beans, cannellini beans, or 15-bean soup mix, rinsed and soaked overnight)
  • 1 smoked ham hock, leftover diced ham, or meaty ham bone
  • 2 carrots, peeled and chopped into bite-sized pieces
  • 2 celery stalks, sliced thinly
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional seasonings: smoked paprika or thyme

Instructions

  1. Rinse and soak the dried beans overnight in a large bowl filled with water. Drain and rinse before using.
  2. Chop the carrots, celery, and onion into bite-sized pieces. Mince the garlic.
  3. Place the beans, ham, vegetables, garlic, and bay leaf into the slow cooker. Pour in the chicken broth until everything is just covered.
  4. Add salt, pepper, and any optional seasonings like smoked paprika or thyme.
  5. Set your slow cooker to low and cook for 8-10 hours, or high for 4-6 hours. Stir occasionally if possible.
  6. If using a ham bone or hock, remove it once the soup is done. Shred the meat and stir it back into the soup.
  7. Taste and adjust the salt and spices as needed.
  8. Ladle the soup into bowls and enjoy it hot. Garnish with fresh parsley or a squeeze of lemon juice for brightness.
