croque madame recipe - featured image

A decadent French sandwich featuring creamy béchamel sauce, gooey Gruyère cheese, crispy buttery bread, and a perfectly fried egg. Perfect for brunch, breakfast, or a quick dinner.

Ingredients

Scale
  • 4 slices of sandwich bread or sourdough
  • 2 tablespoons unsalted butter, softened
  • 4 slices thinly sliced deli ham
  • 1 cup shredded Gruyère cheese
  • 1 cup whole milk
  • 2 tablespoons all-purpose flour
  • 2 large eggs
  • Pinch of nutmeg
  • Salt and pepper to taste

Instructions

  1. Make the béchamel: In a saucepan, melt 2 tablespoons of butter over medium heat. Whisk in 2 tablespoons of flour and cook for 1-2 minutes, stirring constantly. Gradually add 1 cup of milk, whisking to avoid lumps. Simmer until thickened, about 5 minutes. Add a pinch of nutmeg, salt, and pepper to taste. Set aside.
  2. Prepare the bread: Spread softened butter on one side of each slice of bread. Place two slices, buttered side down, on a non-stick skillet over medium heat.
  3. Add ham and cheese: Layer sliced ham and shredded Gruyère cheese on the bread. Top with the remaining slices, buttered side up.
  4. Cook the sandwich: Cook for 3-4 minutes on each side or until golden brown and the cheese is melted.
  5. Fry the egg: In a separate skillet, melt a small pat of butter over medium heat. Crack an egg into the skillet and cook until the whites are set but the yolk remains runny, about 3 minutes.
  6. Assemble the Croque Madame: Remove the sandwiches from the skillet, spoon béchamel sauce on top, and carefully place the fried egg on each sandwich. Serve immediately!
