  • 8 oz (225g) dark chocolate, chopped
  • 1/2 cup (120ml) heavy cream
  • 2 tbsp unsalted butter
  • 1 tbsp instant coffee granules
  • 1 tsp vanilla extract
  • Cocoa powder for rolling
  • Optional: coffee liqueur, chopped nuts, or sea salt

Instructions

  1. Chop 8 oz (225g) of dark chocolate into small pieces and place them in a heatproof bowl.
  2. In a small saucepan, heat 1/2 cup (120ml) of heavy cream and 2 tbsp unsalted butter over medium heat until it starts to simmer. Stir occasionally to prevent scorching.
  3. Remove the saucepan from heat and stir in 1 tbsp of instant coffee granules until dissolved.
  4. Pour the hot cream and coffee mixture over the chopped chocolate. Let it sit for 3-5 minutes to melt, then stir until smooth. Add 1 tsp of vanilla extract and mix well.
  5. Cover the bowl with plastic wrap and refrigerate for 2-3 hours, or until the mixture is firm enough to scoop.
  6. Use a teaspoon or small ice cream scoop to portion the chilled ganache into small balls. Roll them between your palms for a smooth finish.
  7. Roll each truffle in cocoa powder, finely chopped nuts, or sprinkles for a decorative touch.
  8. Place the coated truffles on a parchment-lined tray and refrigerate for another 30 minutes to firm up. Serve chilled or at room temperature.

Notes

Chill the ganache properly before rolling to ensure the right consistency. Experiment with coatings like crushed cookies or shredded coconut for variety.
