  • 1 cup packed brown sugar
  • 1/2 cup dark rum
  • 2 tablespoons Dijon mustard
  • 1/4 cup honey
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • Orange zest (optional)

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Place the ham in a roasting pan, cut side down, and cover loosely with aluminum foil.
  3. In a small saucepan, combine brown sugar, rum, Dijon mustard, honey, unsalted butter, cinnamon, and ground cloves. Heat over medium-low until the sugar dissolves and the mixture thickens slightly, about 5-7 minutes.
  4. Bake the ham for 1.5 hours, basting every 20 minutes with the glaze.
  5. Remove the foil, increase the oven temperature to 375°F (190°C), and bake for an additional 20 minutes to caramelize the glaze. Keep an eye on it to avoid burning.
  6. Remove the ham from the oven and let it rest for 10 minutes before slicing.
