  • 710 lb fully cooked bone-in ham (spiral-cut works best for even glazing)
  • 1 cup honey
  • ½ cup brown sugar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon ground cloves
  • 1 teaspoon smoked paprika (optional)
  • ½ teaspoon garlic powder
  • Applewood or hickory wood chips

Instructions

  1. Preheat your smoker to 225°F (107°C) and add your wood chips.
  2. In a small saucepan, combine honey, brown sugar, Dijon mustard, apple cider vinegar, ground cloves, smoked paprika, and garlic powder. Heat over medium-low, stirring until the sugar dissolves and the mixture is smooth.
  3. Use a sharp knife to make shallow cuts in a diamond pattern across the surface of the ham.
  4. Place the ham in the smoker, flat side down. Close the lid and smoke for 2 hours.
  5. Brush the ham generously with the honey glaze every 30 minutes to build up a sticky, flavorful crust.
  6. After 3-4 hours, use a meat thermometer to check the internal temperature. The ham is ready when it reaches 140°F (60°C).
  7. If desired, transfer the ham to a preheated grill or broiler for 5 minutes to enhance the caramelization of the glaze.
  8. Let the ham rest for 10 minutes before slicing.

Choose applewood for mild sweetness or hickory for a bold smoky flavor. Regularly baste the ham to create a caramelized crust and keep it moist. Let the ham rest before slicing to retain juices.
